Congressional Bean Soup (6 to 8 servings or more) |

| 1 lb. dried small white beans (Soak overnight) 4 C. tomatoes, canned diced 4C. water 1 ham bone (or 2 C. diced ham) 1 C. chopped celery |
1 onion, chopped 2 T. parsley, chopped 1 t. salt 1/4 t. pepper 1 bay leaf |
| Put beans into crock pot and add remaining ingredients. Cover
and cook on low for 12 - 14 hours or until beans are very soft. Remove bay
leaf and ham bone, cutting off any meat from bone returning to soup. Prepared for Seaford Race company - March, 2002 |
