Split Pea Soup
(Prepare a day ahead)
Serves 6

1 1lb.bag split peas
Soak overnight or several hours

Drain
Add 6 c. water in large pot

Chop and add to pot:
1 C. chopped celery
1 C. chopped carrots
1 large onion, chopped
1 clove garlic chopped or (Kara's frozen cube)
1 t. herb (cilantro or thyme)
1 bay leaf

Add ham bone (and more water if needed to cover bone)

Cook 2 hrs. - poking bone until it falls apart
Cool, then pick off ham and discard bone pieces
Discard Bay leaf

Add 1-2 C.Tomato juice

Cook until ready to serve
