Omelet
Serves 1-2
Mix in small bowl:
Beat two eggs
1 T. of water
Saute in Medium size frying pan:
1-2 T. butter (I use salted so I don't need to add more salt)
1/4 c. of onion
1/4 c. green pepper
1-2 t. minced garlic (opt.) I always have a jar of it on hand
Ground pepper
When that has cooked, add beaten eggs. Be sure heat is fairly high.
Cook just a few minutes, turn and if possible fold in half.
1/2 C. grated cheese - Add and put the lid on and turn off the heat and let sit for 5 min.
That also has salt, so I don't add any while cooking.
