Lemon Meringue Pie

Pie Crust

1 1/3 c. flour
1/2 tsp. salt
1/2 c. Crisco (1 bar)
3-6 Tbls. ice water

Roll out, place in 9" pie pan and poke a few holes in it.
Bake with tin pie plate inside it.

Bake at 450° for approx. 12 mins.
or until lightly browned

 

Filling

4 Tbsp. cornstarch
4 T. flour
1/2 tsp. salt
1 1/2 C. sugar
1 1/2/ C. very hot (from microwave)

Cook for approx. 20 min.

Add: 1 Tbsp. butter
Lemon rind - grated
1/3/ C. Lemon juice (approx. 2-3 lemons)
4 egg yolks, beaten (save whites)

Meringue

Beat 4 egg whites until stiff
Add 1/2 tsp. vanilla and 3 T. sugar

Bake at 400 ° until brown - approx. 10 mins..
