Gazpacho Soup
(Prepare a day ahead)
Serves 6 - 8
This is a great summer soup. Never have to cook anything.
Nice for keeping the kitchen cool.
2 peppers, green and red, chopped - save a little for garnish
1 cucumber, chopped - save a little for garnish
14 oz. can tomato sauce with oregano, basil, etc
28 oz. Tomato sauce
3 T. garlic minced
Tabasco sauce - several dashes
2 T. olive oil
1 T. vinegar
Herbes de Provence
Port wine - a splash
Blend for desired consistency
Garnish
Lime slices
3 scallions, chopped
Cucumbers and peppers, previously chopped
Serve with croutons and/or bread |
