425° for 30 min.

3 lb. Tenderloin - Rub with Cumin and season

Marinate in 6 T. olive oil - 1 hr. Remove

Add: 1 T. oil and pearl onions or cipollini

Bake to 135° (approx. 30 min.)

Remove and let stand 10 - 15 mins. to 145°
